The Time of Yeast
Fascinated by leaven's ability to turn grain into alcohol without causing it to rot, I visited a brewery in Ulju where I met the women who make leaven and heard what it means to them in their busy farming lives. When the day of making leaven finally arrived, a day that had been postponed, everyone gathered at the brewery. Perhaps due to my nervousness, I ended up making a big mistake.
